This is a classic Colombian coffee: balanced, sweet, and rich. Lighter roasts have a sweet citrus mandarin acidity shines through, but we’re opting to roast it a little longer to increase the honeyed sweetness and mellow out the acidity. We’re using this for an espresso that hits the coffee-craving bullseye, but it will lend itself to any preparation you desire.
El Aguila is part of an origin project by green coffee importer Raw Material called Red Associations (red in Spanish means “network”). In 2017 when the team at Raw Material met with producers in Colombia, they learned that farmers needed better infrastructure and fixed prices to lessen the risks of investment and make growing coffee economically sustainable. Red Associations is a regional project they launched to address these challenges.
According to Raw Material, the minimum fixed price they pay farmers results in double the household income of a typical coffee producing family, compared to the average income in the regular market over the last five years. This sustainable value chain approach is paving the way for farmers to achieve stable, fair prices for coffee through improved quality control, shared knowledge, and a way into the specialty coffee market.
