Whereas the careful fermentation at El Refugio unveils the deep and complex fruity side that Villa Sarchi rarely presents.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003e\n\u003cstrong\u003eVilla Sarchi\u003c\/strong\u003e is a distinctly Costa Rican coffee cultivar with a unique history. Like Caturra and Pacas, Villa Sarchi is a natural mutation of Bourbon caused by a single-gene mutation known as “Dwarf\/Compactism,” which results in a smaller, more compact plant. First discovered in Costa Rica in the 1950s in the province of Alajuela near the town of Sarchi, the variety has since undergone careful pedigree selection to improve quality and consistency. Villa Sarchi is particularly well adapted to high-altitude environments and strong winds, though it remains relatively rare outside of Costa Rica.\u003cbr\u003e\u003cbr\u003eThe flavour profile of Villa Sarchi typically leads with a distinct floral honey sweetness, bright acidity and full-bodied texture, yet the plant itself is rather susceptible to certain diseases.
