This coffee is the highest grown coffee known of in Rwanda by its importers, Raw Materials, and according to them it's in an area where very few other washing stations are located, making it exceptionally unique. The high growing altitude means the cherries ripen slowly and the beans are very dense giving them bright, pleasing acidity and a high sugar content. Intensive quality control throughout processing means there are almost no defects and results in a remarkably clean-tasting coffee. 

The cherries are hand sorted, then floated in water to separate out under-ripe and damaged fruit. Then the coffee is pulped and fermented in concrete tanks for 12 hours. The fermentation removes the fruit from the bean, which is then passed through a serpentine grading channel. The most dense beans sink to the bottom first and are separated out as the highest grade. They're then given a final rinse, hand sorted once more to remove any insect-damaged beans, and then dried on raised beds. To ensure even drying the beans are turned several times a day, for an average of 30 days total.

Raw Materials is a small importer working directly with farmers in Rwanda and Colombia. Their goal is to connect growers to roasters in a way that improves price stability at the farm level, distributing income more equitably along the supply chain.
